Mayonaise Drop Biscuits...

A friend linked this recipe from All Recipes on Facebook, and I had to try it. I'd never had mayo drop biscuits before. I was soooo missing out! These are great! Simple, light, fluffy, and very easy to pull together with soup or breakfast for dinner. I've been making bags of the dry stuff and storing it in the pantry. All I have to do is add the mayo and milk, stir, give it a minute to puff up a bit, and then drop on a cookie sheet. I usually get about 9 biscuits from this recipe, so that's less than a T. of mayo per biscuit. That's healthy enough, right? :) I've even added flax seed to the recipe to make myself feel a little better about it, and you really can't tell....

Mayo Drop Biscuits

2 c. self rising flour (or measure out regular flour and take out 4 t. and add in 3 t. baking powder and 1 t. salt)
1 c. milk
6 T. mayonaise (I'm a Southern girl, and we use Dukes in this house.)

Mix together and let sit a minute to activate the rise. Spoon onto a greased baking sheet (or a sheet of tin foil on a top of a baking sheet if you're lazy like me) and bake at 400 for 12-14 minutes. Slather with butter, honey, or the strawberry preserves your Mee Maw put up in her kitchen last summer....
